No Bake Energy Balls


1 cup naked oats
2/3 cup toasted coconut flakes
1/2 cup peanut butter 
1/2 cup ground flaxseed
1/2 cup chocolate chips or cacao nibs (optional)  
1/3 cup honey - buckwheat for extra flavour  
1 tsp. vanilla extract


Combine all ingredients and stir together in a medium bowl, until mixed.  Cover the bowl and place in the refrigerator for half an hour to chill.

When chilled, take with hands and roll into small balls, to a bite size ball.  Keep refrigerated for up to one week.  Makes about 20 balls.

Beet Root Salad

1/2 of head of large green lettuce or butter lettuce 
1 tblsp finely chopped red onion
2 medium boiled and chilled beet root, diced
1/8 cup walnuts
small bunch of Roquette or Arugula
1/4 cup Salty Feta - or Soft Goat Cheese - Goat Feta
1/8 cup of Balsalmic Vinegar  
1/4 cup of Olive Oil


Tear up lettuce and mix in arugula.  Toss with onions, nuts, and cheese.  Add the diced beet root at the end as to not colour the salad red. 

For dressing simply mix balsamic and olive oil and pour over salad mixture, place in fridge and cover until ready to eat.
