Kale for kids

Kale and sweet potato salad with tahini, feta, and pistachios

Ingredients:

  • 2 bunches of kale, destemmed and shredded
  • 2 sweet potatoes
  • 1/3 cup dried cranberries
  • 1/3 cup pistachios
  • 1/3 cup feta
  • tahini dressing (below)

This tahini miso dressing should go on everything.  You will loooove it.  Massage that kale and add the rest of the salad ingredients and dig in!

Tahini Miso Dressing

Ingredients:

  • 1/3 cup tahini
  • 1/3 cup water
  • 2 tbsp fresh lemon juice
  • 1 tbsp miso paste
  • 1 tbsp garlic infused olive oil
  • 1/2 tsp salt

Place in a jar and shake shake shake.

To roast the potatoes…

Preheat oven to 375 degrees F.

Wash and scrub potatoes.  Cube them.  Toss them in (~2 tbsp) olive oil and 1/2 tsp salt.  Bake for 30-35 minutes.

Good plain, but better in this salad!  The kids even ate this and asked for more!  I wasn’t sure about the tahini dressing on the kale so I gave them just a bit, but they liked it!  Shouldn’t have doubted their palates (I feel like I always say that, when will I learn!?).  I also gave them both feta for the first time (from my bowl) and they loved it so now I know!

I could probably eat this every day so I’m pretty pleased that my fam bam is just as on board.

Kyle was especially glad to have a salad since he had fried chicken for lunch and was looking for a lighter dinner option.

Sometimes I pinch myself that my family likes to eat the way I do, but then I guess we all meet in the middle because five years ago I never would have thought I’d be eating steak.  But for reals, my 3 and 5 year old eat massaged kale salads.  What did I do to deserve this?!?

P.S. To keep it real with you let me just tell you about how V and I made carrot puree with carrots from the garden and then neither of them were into it.

So don’t think I’m all like Gwyneth Paltrow, ok?

I ended up adding avocado and beans to it and calling it soup and that sold them on it.  You gotta be on your toes!

    I think it’s funny you were surprised they liked it! Exciting nonetheless, especially that P can have some of the feta :). Miso tahini dressyis definitely good with about everything. I have a really crazy amount of miso due to overbuying on my last trip to asia so i keep using it in everything! Miso eggplant os my latest go to dinner with some rice and tofu
    Too funny about the carrot puree- especially that they were into it after adding beans and avocado…?? Haha, whatever works!

    They’re easy to trick…I either offer nooch or avo and that generally works. 😉
