Buttered Rum Hot Chocolate

Butter adds velvety texture and comforting flavor to this warming cocktail. Omit the rum and it's an equally delicious alcohol-free treat for anyone to enjoy.

Ingredients

Makes 4 drinks

1/2 cup (1 stick) unsalted butter
2 ounces bittersweet chocolate, chopped
1/2 cup (packed) light brown sugar
1 teaspoon ground cinnamon
1/8 teaspoon kosher salt
3/4 cup dark rum
1/2 cup heavy cream
Freshly grated nutmeg (for serving)

Preparation

  1. Step 1

    Melt butter and chocolate in a medium heatproof bowl in short bursts in the microwave, stirring after each burst, or set over a saucepan of barely simmering water (do not let water touch bowl), stirring, until smooth. Remove from heat and whisk in brown sugar, cinnamon, and salt.

    Step 2

    Bring 2 1/2 cups water to a boil in a medium saucepan. Remove from heat and whisk in rum and chocolate mixture until combined.

    Step 3

    Using an electric mixer on medium-high speed, beat cream in a medium bowl until soft peaks form.

    Step 4

    Reheat hot chocolate, if needed, then divide among mugs. Top generously with whipped cream and nutmeg.

  • Agree with the previous commentator - definitely halve the sugar (especially if you happen to top it with sweetened whipped cream, which I did because I had it in the house). Otherwise, the flavor is fantastic, with or without alcohol. Note that the serving size is a bit small though - 2.5 c water + .5 cup plus a little other stuff gives you about four 6-oz servings…and my mugs are a lot bigger than that!

  • Loved this but halved the butter and didn’t miss the extra. Also reduced sugar to 1/3 cup and increased the salt by double at least. With those changes—amazing!

  • I used Bakers semisweet chocolate chips because it's what I had and even with those the drink was delicious. At first I thought it seemed a bit thin - too much water - but once the whipped cream was on top it was perfect. I used a golden Rum and it was not too strong at all. All the guests loved it.

  • Amazing and so decadent. I made according to the recipe and used Meyer's dark rum. It doesn't actually need the whipped cream to be satisfying and delicious... I dont think it adds or subtracts to the flavor - it's just a matter of what you're in the mood for! Keeper recipe.

  • Wow! Did not expect this to be soooo good! Except for the cinnamon, I followed the recipe exactly. I wasn’t quite sold on the cinnamon, thinking it would all just sink to the bottom. I did generously sprinkle cinnamon over the whipped cream garnish though. Everything comes together in your mouth all at once...the sharp rum, the luscious whipped cream, the chocolate and a fresh hit of cinnamon. I’m having a second cup.

  • absolutely ahhhmazingggg. I was skeptical at first because after I added the water it looked dreadful but once I put the whipped cream and nutmeg on top I melted into my couch. This is delicious and a staple in my cocktail book

  • I varied by using cocoa (quicker). Instead of cinnamon I used Jack Daniel's Fire Whiskey. Kind of obscenely delicious!
