Parsnips  
Parsnips have been cultivated since ancient Roman times. These root vegetables are often mistaken for white carrots, but they have a distinct flavor. As parsnips mature in the ground, pulling nutrients from the earth, they begin to develop a sweeter flavor. They're high in vitamins and minerals - especially potassium.

Yucca Root  
Delicious and versatile, this healthy desert root can be used in a variety of ways. Yucca Roots have a flavor similar to that of potatoes and a stringy consistency like a pumpkin. Yucca Roots are rich in vitamins and minerals and contain a concentrated dose of Vitamin C, and are full of antioxidants that neutralize free radicals.

Radish 
Ranging in color from pale to vibrant red and deep purple, radishes are a tender and crisp root vegetable. Their flavor is mild, only slightly peppery with almond-sweet notes. Radishes vary in color and can range from the size of a golf ball to a softball, and are delicious in any form - fresh, cooked, pickled.

Rutabaga, Turnip, & Salsify 
A once understated root vegetable, the turnip has recently found its way to some of the most popular restaurants across the United States. The rutabaga has a more mellow, golden appearance than turnips or potatoes, and when cooked, it turns sweet yet savory — like the richest golden potato you can imagine. Salsify is a more slender relative to the parsnip. It is also known as the 'oyster plant' due to its mild oyster flavor when cooked.
