White Beach Artichoke Burger
Kick off grilling season with these delicious and easy veggie burgers featuring artichokesāan antioxidant superfood and nutrient powerhouse. Some of you might already have an artichoke growing in your garden!
Yield: 4 large burgers
Serving: 4
Ā
Ingredients
1ā2 medium onion, finely chopped
1 - 14 oz can of cannellini beans, drained
1 - 14 oz can artichoke hearts, drained & chopped
3 cloves garlic, finely chopped
1 cup rolled oats (gluten free if required)
1 teaspoon rosemary, chopped (dried or fresh)
1 teaspoon thyme (dried or fresh)
Zest of 1 small lemon
1 teaspoon salt, or to taste
1ā2 teaspoon pepper
Ā
Directions:Ā
SautƩ the finely chopped onion in a frying pan that has been prepped with a very light spritz of extra virgin olive oil. You may also use a dry pan. The onions are ready when they are translucent and begin to brown.
Add the beans to a medium sized mixing bowl and mash roughly with a potato masher. You want them a bit crushed but not mushy.
Put the oats in a food processor, or blender, & pulse a few times until they are broken up a bit. Be careful not to accidentally make oat flour!
Add the chopped oats to the mixing bowl that contains the smashed beans. Next, add all remaining ingredients to the mixture including the chopped artichoke hearts and cooked onions.
Using your hands, mix all ingredients until they are well incorporated.
Shape into 4 patties. Use your hands to squeeze the mixture into firm āburgers.ā Place the patties onto a plate that has been covered with parchment paper or a silicone baking pad. Wrap the plate in plastic wrap and freeze for a minimum of two hours. Alternatively, you can refrigerate for up to two days but they are easier to handle when frozen.
Prepare the cold grill with a spritz of olive oil to help prevent sticking (caution: do not spray a hot grill; doing so is dangerous). Place the patties onto the medium-hot grill and leave to cook until a nice crust develops then turn over. This typically takes 8-10 minutes but the time may vary greatly depending on the temperature of your grill.
Ā
Remove from the grill and serve immediately. Patties can be served plain, wrapped in lettuce, or on a whole grain bun loaded with traditional burger toppings. Enjoy!

We recently sat down with Scott Kerr, the Head Masters Swim Coach, to learn more about himself, and the Masters Swim Team that he coaches here, at the DAC.Ā
Ā
Scott moved to Eugene in 1990, but is originally from Salem. He has been competitively swimming since he was 9 years old, and has had a passion for the water his whole life. He has finished between 40-50 triathlons and a Canadian Iron Man. Scott attended school in Florida for hospitality, going on a swimming scholarship, but couldnāt see himself working in the industry for long. A few years after moving to Eugene, he married his wife of 25 years, Tony. They have two sons together, Ian and Bryce. Both sons competed in swimming all through high school, and seem to share the same love of water.
Ā
He joined us at the DAC in September of 2022 as the Head Masters Swim Coach. Scott currently coaches all levels of adult swim lessons, the occasional childās lesson, and the Masters Swim team. He finds fulfillment in teaching adults to overcome their fears and to learn and enjoy the water. Scott wants every person of every age āto enjoy the sport that Iāve been in love with my whole lifeā.
Ā
Donāt be intimidated by the Masters Swim name, all are welcome to join! US Masters Swim is a program where adults can swim competitively, though you donāt have to compete to join his class. Scott creates a practice that caters to each member attending. Scott exclaimed, āMasters is fun because itās a social event as much as anything elseā, to see friends, other athletes, and to break your personal record. To enjoy the sport, you donāt have to look at it as success or failure, according to Scott.
Ā
Our very own Masters Swim team recently competed in a weekend tournament in Bend, where they won 3rd place in their division! Nine members from the club went to compete, and signed up for any race they wanted; some raced once, and others six times. Congratulations to all that competed!
Ā
If you are interested in competing or attending a Masters Swim class, donāt hesitate to reach out to Scott atĀ swimecsc@yahoo.comĀ . He will make you feel welcomed and answer any questions you may have.
