Celebrate Heritage Day with a truly South African twist by using Rooibos in your braai marinade. This aromatic marinade not only adds rich, smoky flavour to your meat but also uses Rooibos’s natural tenderising properties for juicy, delicious results. Perfect for beef, lamb, or chicken on the grill.

Ingredients:

200 ml strong brewed Rooibos tea (from 2 tea bags)
125 ml vegetable oil
125 ml tomato sauce
125 ml fruit chutney
30 ml Worcestershire sauce
30 ml balsamic vinegar
5 garlic cloves, crushed
1 tsp mustard or mustard powder
1 onion, finely chopped
1 thumb-sized piece of fresh ginger, grated
30 ml brown sugar

Method:

Combine all ingredients in a saucepan and bring to a boil over moderate heat.
Simmer for 15 minutes, then remove from heat and allow to cool.
Coat your choice of meat with the marinade and let it sit for at least 2 hours, or overnight for a deeper flavour.
Grill the meat over medium coals, basting occasionally with the marinade, until cooked to your liking.
