I cannot believe there is only a MONTH left here in Luxembourg! So far this semester has flown by, filled with classes, Discovery Tours, SFC events like the Halloween party, independent travels, special speeches and receptions with local guests. We even celebrated 25 years in Differdange and hosted a delegation of colleagues from Oxford, Ohio for a week. Most recently, students attended their week-long study tours in Poland, Slovenia, Ireland and France.

One of the unique things about our program is our cohort classes. In almost every interaction I have with other Europeans on Discovery Tours (whether they be tour guides or receptionists, or even guests here at the Château) I get asked the same questions. Wait—so what is your program? What type of classes do the students take? Is it mostly Finance and French?
I love being asked this because I get to highlight what I think of as one of MUDEC’s unique strengths. "Well," I say, "we do have business majors, but we also have Architecture and Art and History, and Kinesiology!"
I sometimes pull in a student and ask them to share their schedule. For instance, Jack Shaw, is a Kinesiology (KNH) major. He is able to take multiple classes that count towards earning his degree with our Nutrition Professor, Beth Miller, who has joined us in Luxembourg for the semester to teach for the KNH program.

As Dr. Miller explains, the KNH cohort has been designed to enable KNH majors to engage in a study abroad experience while continuing required and elective coursework in the various majors (Kinesiology, Nutrition, Public Health, Athletic training). The first class of KNH cohort students studied at MUDEC in the Fall of 2021.
Each fall semester, one of the KNH faculty relocates to MUDEC to teach the courses and engage with students. The cohort this semester includes both nutrition and kinesiology students, so the courses serve to meet the nutrition major requirements, as well as the nutrition minor requirements and electives. Dr. Miller is teaching two nutrition courses at MUDEC: KNH 102, Food, Nutrition, & Health and KNH 213, Global and Community Nutrition. The cohort is designed so that students take both courses.
Miller says, "I love having the students in both classes where they learn the foundation of nutrition science and the connection to health and disease states in the first class (KNH 102) and then transition from this to understanding how various global and local community, economic, & social environments, as well as nutrition policies, influence access to food and food security. It is exciting to be able to connect the material from one class to the other, as well as connect this food and nutrition information to their European travel experiences. The engagement with the students and the exceptional teaching experience have been a highlight of my career, and I am so grateful to have had this opportunity!"

Jack Shaw, Dr. Miller, and junior Maddie Wasser are all members of the Student Faculty Council, a group that collaborates to organize and run events throughout the semester. During wellness week for midterms Dr. Miller led a Pilates class at the Château for students!

Hello everyone! My name is Jack and I am serving as treasurer for the Student Faculty Council at MUDEC for this semester. I am a third year student majoring in Kinesiology with a minor in General Business. I spend the majority of my free time working out, playing disc golf, and making playlists. I love the outdoors and exploring, which is something I have spent a lot of time doing this semester.

Hey everyone! My name is Maddie and I am a junior at Miami this year. I am studying both Political Science and International studies as a double major. In Oxford, I have been involved in Women in Law and one day hope to pursue something with international relations or diplomacy. In my free time I love to hang out with friends and go on road trips.

Wasser said, "Dr. Miller’s class was never something I thought to take back in Oxford, but I am so happy I have had the opportunity to learn about the subject. I had never known much about nutrition, but since taking the class I not only better understand what goes on in the body but have loved having Dr. Miller as a professor because of her constant engagement and work outside the classroom!”
