Today’s veggie spotlight is another root veggie that’s hard to miss at the market this time of year: beets! These vibrant roots pack a whole lot of color, flavor, and versatility. Much like carrots and other cool-season crops, beets thrive in the mild Texas winter and early spring—growing slowly in cooler soil helps them develop sweetness and texture.
