Today’s veggie spotlight is another root veggie that’s hard to miss at the market this time of year: beets! These vibrant roots pack a whole lot of color, flavor, and versatility. Much like carrots and other cool-season crops, beets thrive in the mild Texas winter and early spring—growing slowly in cooler soil helps them develop sweetness and texture.

You’ll find beautiful bunches of beets from many of our farmers right now, greens and all. Grab a few varieties at the market this weekend, and keep an eye out for a fun guest market chef demo next weekend at Mueller featuring beets (and creative ways to use their greens) straight from the market.
