Update on Sustainable Seafood at Bistro 1682
The Sustainable Seafood Initiative is very close to our hearts at Steenberg. We only serve SASSI green-listed seafood and our suppliers need to hold sustainability certifications. Chef Kerry Kilpin works closely with her local producers.
With the recent gale-force South Easter hitting the Cape, the trawlers who catch Angelfish and hake have not been able to go out to sea as often. This has resulted in more stock of Yellowtail which is caught using linefishing methods. Chef Kerry Kilpin has created beautiful dishes of Asian Yellowtail Tartare and Herb-crusted Yellowtail with chickpea, olive ragout, coriander yoghurt and curry oil.
