COVID-19: One Year Later
The past year has transformed nearly every aspect of our world. Seemingly overnight, the quirky (wearing leggings during a Zoom call with clients!) became mundane. Meanwhile, our friends, family, colleagues, and communities have had their lives changed in critical ways that promise to have much longer-lasting effects. Living through a global pandemic has driven dramatic shifts in our jobs, eating habits, childcare, and even our collective sense of time.

Celebrating Women's History MonthThe month of March celebrates the contributions women have made throughout history in science, politics, law, sports, the arts, entertainment, and many other fields. While figures such as Elizabeth Cady Stanton, Harriet Tubman, Amelia Earhart, Eleanor Roosevelt, Margaret Thatcher, Rosie the Riveter and Betty Friedan are often associated with Women's History Month, there are countless extraordinary women who have earned their place at the table. Consider inventor/actress Hedy Lamarr, scientist Dian Fossey and mathematician Katherine Johnson, astronauts Sally Ride and Mae C. Jemison, authors Maya Angelou and Amy Tan, and contemporary directors Kathryn Bigelow and Ava Duvernay, and activists Dolores Huerta and Sylvia del Villard.

Community COVID-19 Testing
Attention NJCU Community:
New Jersey City University, in a partnership between the New Jersey Department of Health and Clinical Staffing Solutions, will continue to offer COVID-19 PCR testing to members of the local community again this weekend, March 20-21.
Testing will be available on alternate weekends through at least early April, from 10 a.m. to 4 p.m., on the second floor of the Gilligan Student Union Building on campus. Free parking will be provided in the NJCU garage, located on Culver Avenue, between John F. Kennedy Blvd. and West Side Avenue.
This event is open to the public. To pre-register, visit COVID.VLT.CO. For all others, no appointment is necessary and individuals will be offered a test on a first-come, first-serve basis. Please be prepared to present a copy of your insurance card at the testing site; those without insurance will still be offered a COVID-19 test. Test results will be available within 3-5 days.
Please make sure to follow proper social distancing and PPE protocols. Appropriate face masks are required to enter all NJCU campus facilities.

Food Assistance If you need food assistance, you may be eligible for NJ SNAP, New Jersey's food assistance program. To learn more go to NJSNAP.gov or to apply go to NJHELPS.org. New Jersey WIC (Special Supplemental Nutrition Program for Women, Infants, and Children) is allowing remote access to benefits and additional food items.

Tasty Baked Mac n Cheese
Ingredients: 1 (16 oz.) package elbow macaroni 1/2 tsp. salt 3/4 c. butter, softened - divided 1 c. sour cream 1 tbsp. cream cheese softened 1 ( 8 oz.) package shredded sharp cheddar cheese 1 egg yolk 2 tbsp. all- purpose flour 1/2 tsp. salt 1/2 tsp. ground cayenne pepper 1 c. milk 1 ( 8 oz.) package shredded mild cheddar cheese Directions
- Preheat oven to 375 degrees F (190 degrees C). Line a 9x13-inch baking dish with parchment paper.
- Bring a large pot of water to a boil. Cook elbow macaroni in the boiling water, stirring occasionally until almost cooked through and firm to the bite, about 7 minutes. Drain and transfer to a large bowl. Sprinkle macaroni with 1/2 teaspoon salt and stir 1/2 cup butter into the pasta.
- Mix 1/4 cup butter, sour cream, cream cheese, sharp Cheddar cheese, and egg yolk together in a bowl. Stir flour, 1/2 teaspoon salt, cayenne pepper, and milk into the sour cream mixture.
- Spread 1/4 cup sour cream sauce over bottom of a prepared baking dish. Stir remaining sour cream sauce into macaroni. Pour macaroni into baking dish atop sauce layer; sprinkle mild Cheddar cheese over the casserole.
- Bake in the preheated oven until heated through and cheese topping has melted, about 15 minutes.
