Here we are in the month that celebrates our heritage. The Rooibos Council shared an emotive video that serves as a reminder of how brave and powerful South Africans can be as a collective force during the global Covid-19 pandemic.
To celebrate with Rooibos on National Heritage Day taking place on 24 September, or as many South Africans refer to it, “National Braai Day”, we compiled a three-course meal with Rooibos as an ingredient, to try out.
Furthermore, we share some information on why it is beneficial to switch your herbal tea to Rooibos, and how you could be the lucky winner of a House of Rooibos voucher!

The three-minute video using finely ground Rooibos tea beautifully illustrates a powerful message to the country. According to the statement released by Meropa Communications on behalf of the SA Rooibos Council, a talented performance artist from Russia, who happens to love our local brew, was commissioned by the SA Rooibos Council (SARC) to create a series of renderings whereby Rooibos tea leaves are skilfully scattered and moved on a lightbox by hand to tell a story – similar to sand animation.
Watch how Anna Strelkova, a talented animation artist, uses Rooibos tea as her medium to share a message of hope to all the people that make up our beautiful rainbow nation.

To spoil yourself on Heritage day, we have prepared delicious recipes for a three-course meal that you can cook for you and your family.

Ingredients:
QUINCES
- 1 litre white wine
- 130 g (150 ml) castor sugar
- 4 Rooibos tea bags
- 1 vanilla pod
- 100 ml granadilla or raspberry vinegar
- 250 ml muscadel
- 1 kg quinces, peeled, cored and cut in quarters

DUCK LIVER
- 400 g duck livers
- salt and freshly ground black pepper
- 30 ml olive oil
- 200 g large oyster mushrooms
- 6 bread crisps for garnishing
- 200 g baby salad leaves or wild rocket

Method:
QUINCES
1. Heat the wine, sugar, Rooibos tea bags, vanilla, vinegar and muscadel over low heat and stir until the sugar has dissolved. Strain to remove the tea bags and vanilla pod.
2. Add the quince quarters, bring to the boil and poach until soft. Remove the quinces with a slotted spoon and let them cool.
3. Boil the liquid until it is reduced to a syrup consistency, and keep aside.
DUCK LIVER
4. Season the livers with salt and pepper to taste.
5. Heat the olive oil in a pan over medium to high heat and fry the livers until golden brown on the outside but still just pink inside. Remove the livers from the pan and keep aside.
6. Toss the mushrooms in the same pan until just cooked.
SERVING
7. Dice the cooked quinces. Spoon 3 small piles of the quinces per plate on 6 rectangular plates. Place a duck liver on top of each quince pile. Drizzle with the Rooibos reduction and garnish with bread crisps. Scatter the mushrooms around and finish with baby salad leaves.

| Ingredients:
- 1 kg chicken portions
- 1 cup rooibos tea (black, without sugar)
- 2 cloves garlic - chopped
- 1 tsp ginger - chopped
- 1 tsp salt
- ½ tsp freshly ground black pepper
- 4 tbsp tomato sauce

| Method:
1. Put all the ingredients into your marinating container, excluding the chicken. Give a quick mix until combined and set aside.
2. Remove the skin from your chicken and cut two horizontal slits on each piece. This is to allow more flavour to permeate through the meat, even right to the bone.
3. Put the chicken pieces into the marinade. Ensure that the pieces are covered by the marinade.
4. Close the marinating container and marinate for at least 2 hours or even up to 24 hours.
5. When the marinating time has elapsed, remove the chicken from the marinade and place on an oven tray. Grill at 180°C for 45 min - 1 hour or until browned and cooked through.

| Ingredients:
- 600 ml milk
- 6 egg yolks
- 150 g castor sugar
- 2 rooibos tea bags
- 250 ml cream

| Method:
1. Make a custard by gently heating 600ml of milk to 6 egg yolks and 150g of castor sugar, stirring constantly till thickened. 2. Once it’s thickened to the consistency of thick pouring cream, add two rooibos tea bags to the hot custard and set it aside to cool. This will allow the rooibos tea to bleed its flavour into the custard.
3. When the custard has cooled down, remove the tea bags, add 250ml of softly whipped cream and transfer the mixture to a metal bowl. Refrigerate (preferably overnight). Once thoroughly chilled, transfer your custard to an ice-cream churner and let the happy machine do its work.
4. It's delicious on its own, but even better drizzled with a spoonful of sweet-sour moskonfyt.

| In a study of 40 overweight adults with a high risk of heart disease, six cups of rooibos tea daily for six weeks decreased “bad” LDL cholesterol while boosting “good” HDL cholesterol.
Rooibos tea also helps to keep blood pressure under control. Drinking rooibos tea may have beneficial effects on blood pressure by inhibiting the angiotensin-converting enzyme, research suggests.
ACE indirectly increases blood pressure by causing your blood vessels to contract. In a study in 17 people, drinking rooibos tea inhibited ACE activity 30–60 minutes after ingestion.
