VEGAN RECIPE OF THE WEEK!

Eggless Egg Salad

recipe courtesy of Feed Me Vegan
makes 4 servings
Ingredients:
1 block extra firm tofu, drained and pressed
1 rib of celery, diced
1/2 onion, chopped finely
2 tsp prepared mustard
2 T nutritional yeast
pinch turmeric
pinch kala namak (Himalayan Black Salt - for eggy flavor)
1/2 cup eggless mayonnaise

Instructions:

1. Crumble tofu into mixing bowl.
2. Add all ingredients except mayo. Stir to combine
3. Add mayo, starting with 1/4 cup until you reach the consistency you desire.
4. Season wtih salt and pepper to taste.
5. Enjoy on bread, toast, lettuce, tortillas, whatever! Perfect for a picnic lunch or a barbeque!
