Ingredients:
- 60g Brown sugar
- 10 Rooibos tea bags
- 250g Butter (softened)
- 5ml Vanilla essence
- 150g Cake flour
- 150g Self-raising flour
Method:
1. Pre-heat oven to 180 °C. Grease a baking tray.
2. Remove the leaves from the Rooibos tea bags.
3. In a saucepan, lightly toast the Rooibos leaves. In a mixing bowl, cream the butter and sugar together with the toasted Rooibos leaves.
4. Add the vanilla essence and continue beating.
5. Slowly add in the two flours and mix until dough is formed.
6. Roll into 25 g balls and place on a greased baking tray. Press down with a fork. Allow to rest for a minimum of 30 min. Bake for 12 minutes.
7. Dust with castor sugar.
This recipe will yield 24 cookes.
