Amaranth is a heat-loving and drought-tolerant crop, making it a great fit for the Texas growing climate this time of year. Its leaves, often tinted with purple, are packed with nutrients and have an earthy, spinach-like flavor.

Try sautéing amaranth with garlic, tossing it into a stir-fry, or adding it to soups and stews. You can cook it just like you would spinach or any other sturdy leafy green!

Look for fresh amaranth greens from Vermillion Farms at Mueller or amaranth microgreens from Joe's Microgreens at Bell and Mueller, and bring home a bunch to try something a little different this week.
