Rutabaga, Turnip, & Salsify
A once understated root vegetable, the turnip has recently found its way to some of the most popular restaurants across the United States. The rutabaga has a more mellow, golden appearance than turnips or potatoes, and when cooked, it turns sweet yet savory — like the richest golden potato you can imagine. Salsify is a more slender relative to the parsnip. It is also known as the 'oyster plant' due to its mild oyster flavor when cooked.
