Author Chef Peter Maffei
Chef Peter Maffei brings more than 16 years of culinary experience to Cannon + Belle at the Hilton Austin. He was born and raised in New York City and fascinated at an early age by the city’s world-class chefs and restaurants. Upon graduating from the Culinary Institute of America, Maffei began his career at Del Frisco’s Double Eagle Steakhouse, followed by Fredericks and Zoe, both in New York. His dishes are influenced by his countless trips to New York’s famous Union Square Farmers Market, as well as the great Texas produce he has come to love since moving to Austin in 2008.
Chef Maffei enjoys presenting the simplicity of each dish, intriguing the diner by accenting vibrant flavors and focusing on seasonal local ingredients. While he is a master with steaks and seafood, Maffei has a deep appreciation for the versatility of produce and developed the Finn + Porter’s (at Hilton Austin) first Vegetarian Menu which garnered rave reviews.
Maffei regularly teaches cooking classes at Austin’s Central Market and represents Cannon + Belle at major local fundraising events such as the Austin Food & Wine Festival, Big Reds & Bubbles, Communities in Schools’ Food for Thought, Austin Film Society’s annual Film & Food, La Dolce Vita benefiting the The Contemporary Austin and more.
He was named the Carl E. McKee Hospitality Person of the Year for 2014 by the Austin Hotel and Lodging Association. Maffei credits his inspiration to his wife Kelly and his daughter Ava.
