Happy 2017

We have the start of a new year. This presents us with another opportunity to move on all those changes we have been promising ourselves. Maybe yours is a new diet or more regular exercise or a new hobby. Perhaps, you plan to pay more attention to your health, wealth or lending a hand to others. Many of us use these early days of the new year to contemplate and to commit or recommit ourselves to the changes in our lives we have wanted to make. If you are one of those who has chosen to "make a change", good for you!

For me, one of my biggest commitments has not changed but it is constantly renewed and that is to provide the highest quality medical and surgical foot care to my patients that I can. What I have found is that many times patients do not know the full scope of what we do and how we can help. So follows a list of the conditions we treat on a regular basis. Recipe Corner
Chicken-Peanut Soup
This recipe is from Jane, our new addition to the Hillsboro office.  I tried it, it's wonderful!
Ingredients
  • *1 whole chicken
  • 2 onions, diced (plus add'l if cooking chicken)
  • 1 Tbsp.minced garlic (plus add'l if cooking chicken)
  • 2 Tbsp dark sesame oil
  • 2 Tbsp. curry powder 
  • ½ teaspoon salt (plus add'l if cooking chicken)
  • ½ teaspoon freshly ground black pepper (plus add'l if cooking chicken)
  • ¼ teaspoon cayenne pepper, or to taste
  • ½ teaspoon crushed red pepper flakes, or to taste
  • 3 cups chicken broth
  • 1 can coconut milk
  • ¼ cup tomato paste
  • 1 cup chopped stewed tomatoes, drained
  • 1 cup chunky peanut butter 
Instructions

Boil whole chicken for 45min. with 1 Tbsp. minced garlic, 1 tsp. salt, 1 tsp. pepper & 1/3 cup. chopped onion. Let cool, pull off meat.

In a small saucepan, saute onion and garlic in the sesame oil until the onion is tender, about 10 minutes.

Add all ingredients EXCEPT for the coconut milk into a crock pot.  Cook on low several hours or all day.  

Add coconut milk when ready to serve.

*I saved some time and cheated, used a whole cooked chicken from Costco:)
