Groundhog Day 2021
Groundhog Day is a part of popular culture among many Americans and it centers on the idea of the groundhog coming out of its home to “predict” the weather. It derives from the Pennsylvania Dutch superstition that if a groundhog emerging from its burrow on this day sees its shadow due to clear weather, it will retreat to its den and winter will persist for six more weeks; but if it does not see its shadow because of cloudiness, spring will arrive early.

Black History Month 2021Black History Month is an annual celebration of achievements by African Americans and a time for recognizing their central role in U.S. history. Also known as African American History Month, the event grew out of “Negro History Week,” the brainchild of noted historian Carter G. Woodson and other prominent African Americans.

Chinese New Year, also known as Lunar New Year and the Spring Festival, is celebrated by more than 20% of the world. It’s the most important holiday in China and to Asian people all over the world. It is a time to welcome spring and what it brings along: planting and harvests, new beginnings, and fresh starts.

NJCU'S Health and Wellness Center
Services to all students, appointment needed — NJCU's Health and Wellness Center is as affordable and convenient for registered students as it is helpful and outstanding. Located in easily accessible Vodra Hall, the Health and Wellness Center offers preventive and primary care services to help NJCU students stay healthy, regardless of insurance. Appointments are necessary; students are seen in the order in which they arrive unless their condition warrants otherwise.

Campus Compact Virtual Student Conference 2021
This conference is taking place virtually as we begin to emerge out of a global pandemic. We have been social distancing for almost a year, wearing masks, and not interacting in crowded indoor spaces. Yet, despite all this, as people, as students, as a democracy, we HAVE TO STAY CONNECTED. This is so important:

One Pan Creamy Garlic Salmon
Ingredients: Salmon filets 2 tsp. olive oil 2 tbsp. ghee 5 cloves garlic 1 small yellow or white onion, diced 1/3 c. vegetable broth 5 oz. jarred sun-dried tomato drained of oil 1 3/4 c. coconut milk Salt and pepper - to taste 3 cups of baby spinach leaves 1/2 c. grated parmesan cheese 1 tbsp. fresh parsley, chopped 1 tbsp. dried oregano Directions
- To make the creamy garlic salmon recipe: Heat the oil in a large non-stick skillet over medium-high heat. Season the salmon filets on both sides with sea salt and pepper, and sear in the hot pan, flesh-side down first, for 4-5 minutes on each side, or until cooked to your liking ( I like it to still be pink in the middle, trust me). Once the salmon filets are cooked, remove from the pan and set aside.
- In the same pan, melt the ghee in the remaining pan juices. Add in the garlic and fry until fragrant (about one minute, do not allow to brown, garlic gets bitter quickly). Add the oregano and the onion and stir fry until translucent. Chop and add the sun-dried tomatoes and fry for 1-2 minutes so they release their flavors. Finally, pour in the vegetable broth, and allow the sauce to reduce down slightly. About 5 minutes.
- Reduce heat to low, add the coconut milk, and bring to a gentle simmer while stirring occasionally. Season the sauce with sea salt and pepper to your taste.
- Add in the baby spinach and allow to wilt in the sauce, and add in the parmesan cheese. Allow cream sauce to simmer for further stirring frequently until cheese melts through.
- Add the grilled salmon filets back into the pan; sprinkle with the parsley, and spoon the sauce over each filet. Serve the creamy garlic salmon over steamed vegetables or cauliflower rice.
