Five New Realities to Know About Food Insecurity and Student Hunger in Colleges
As higher education adjusts to its “new normal,” it must be prepared for today’s students, many of whom have been left exhausted by this last year. While they showed us just how resilient they can be, we know their basic needs were threatened as their learning and living environments abruptly changed in the face of a global pandemic.
A student’s sense of basic needs security is critical to their success -- and as students get ready to return to their campuses, colleges and universities can play a central role in making them not only feel welcomed, but supported as they earn their degrees. Here are five realities about food insecurities and student hunger:

NJCU Gothic Knight Food Pantry
At NJCU, we hear you and we’re here to help. We’re here to help you graduate and create an outstanding campus community. We want you to be fed. We’ve created the Gothic Knight Food Pantry (GKFP) to address food insecurity. Food insecurity has increasingly become an issue on college and university campuses and can pose a significant barrier to student success.
Many students come to campus with limited resources and little experience managing their needs. Hunger makes it difficult to study, sleep, or engage in academics and social activities at the same level as peers. If our students' physiological needs aren't being met, it ultimately decreases the chances of meeting their full potential and their overall experience. Jersey City Pride 2021
The LGBTQ+ Pride Festival is recognized not only as a premier LGBTQ+ event in Hudson County, but also one of the largest pride festivals in the Northeast. The events of Pride season exemplify the strength and growth of our LGBTQ+ and allied community. More importantly, Jersey City Pride emphasizes the importance of diversity in our community, making it stronger and more accepting of all individuals and their contributions to our society
This year, Jersey City Pride will be celebrating its 20th Anniversary with a month-long celebration throughout Jersey City leading up to its Pride Festival celebration on August 21. The festival will return to Newark Avenue this year for a live in-person event with a smaller footprint than the 2019 festival. NJCU COVID-19 Vaccination Card Requirement
NJCU's highest priority is offering our students a vibrant in-person learning environment this coming Fall 2021 semester. Now that vaccines are widely available, we are taking the necessary steps to expand in-person activities to enrich your college experience.
We are committed to ensuring that our faculty, staff, and students are safe when they return to in-person classes this fall. With that goal in mind, all NJCU students taking in-person classes this fall will be required to show proof of vaccination by August 15.
Attached are directions on how to upload a copy of your COVID-19 Vaccination Record Card to GothicNet.
If you have not already been vaccinated, you can reserve a vaccination appointment at hudsoncovidvax.org. After signing up and verifying your email to complete your registration, you will be able to schedule an appointment. To find other vaccine sites in the state, visit the New Jersey vaccine appointment finder or visit https://covid19.nj.gov/pages/finder and use your zip code to find sites nearest you.

Chef RoQu's Recipes
Fried Pickles with Buttermilk Ranch Dressing

Ingredients:
- 1 small shallot, chopped
- 1/2 c. mayonnaise
- 1/4 c. buttermilk
- 2 tbsp. finely chopped fresh chives
- 1/4 tsp. garlic powder
- Kosher salt and freshly ground black pepper
- 3 c. canola oil
- 3/4 c. all-purpose flour, spooned and leveled
- 3/4 c. cornstarch
- 3 tbsp. cornmeal
- 3/4 tsp. baking soda
- 1 c. club soda
- 8 or 9 large pickles (from a 46-ounce jar) cut on the bias into 1/4-inch-thick slices

Directions:
- Whisk together shallot, mayonnaise, buttermilk, chives, and garlic powder in a bowl. Season with salt and pepper.
- Heat oil to 350°F in a medium saucepan. Whisk together flour, cornstarch, cornmeal, and baking soda in a second bowl. Season with salt. Whisk in club soda until combined.
- Working in batches, dip pickles in batter, letting excess drip off, and transfer to oil. Fry, turning once, until golden brown, 4 to 6 minutes per side. Transfer to a paper towel-lined plate. Serve with dressing alongside.
