Looking for a delicious after-dinner spoil? Try this recipe for apple and berry pudding. It also features Rooibos to give it a truly one-of-a-kind taste.
Ingredients:
- 3 Granny Smith apples, peeled and chopped
- 2 tbsp lemon juice and zest
- 330g castor sugar
- 500g frozen mixed berries
- 2 eggs, mixed
- ½ cup Laager Wild Cherry & Cranberry Rooibos
- 1 tsp vanilla
- 1 cup plain flour, sifted
- 1 tsp baking powder
- icing sugar, to dust
- thick cream mixed with 1 tsp ground cinnamon, to serve
Method:
- Preheat the oven to 160°C. Place apple, lemon juice and 1 cup sugar, Laager Wild cherry & Cranberry Rooibos tea. Stir for 3 minutes till sugar dissolves. Cool, then stir through berries.
- Transfer to a 1.25-litre baking dish.
- Set aside. Place flour, baking powder and remaining sugar in a bowl. Pour egg mix and vanilla into dry ingredients. Whisk well to form a smooth batter. Pour over the fruit, then bake for 30-35 minutes until golden and firm to touch. Dust with icing sugar. Serve with thick cream or ice cream.

Looking for some inspiration for your next family dinner, or a meatless Monday masterpiece? Try this easy recipe for vegetarian Rooibos bobotie - a true local classic (with a twist)!
Ingredients:
- 2 cups of strong Laager Rooibos tea
- 1 cup of buttermilk
- 10ml of olive oil
- 2 onions, finely chopped
- 1 tablespoon of finely grated fresh ginger
- 1 clove of garlic, crushed
- 1 sweet potato, grated
- 4 teaspoons of curry powder
- 4 teaspoons of ground cumin
- 2 teaspoons of ground coriander
- 1 teaspoon of ground turmeric
- 1 cup of brown lentils, uncooked
- ⅓ cup of raisins
- 40ml of vinegar (preferably red wine vinegar)
- 2 eggs, beaten
- 4 small bay leaves
- ¼ cup of flaked almonds
- salt, lemon juice and black pepper to taste
Method:
- In a large pot, heat the oil and fry the onions, ginger and garlic. Add in the sweet potato and the remainder of the spices and fry until you start to smell the aromas.
- Reduce the heat, add in the lentils and Laager Rooibos tea. Cover the mix with a lid and let it simmer for 30 – 40 minutes until the lentils are cooked.
- Preheat your oven to 180˚C.
- Add in the raisins, vinegar, salt, lemon juice and pepper. Once well combined, spoon the lentil mix into an ovenproof dish.
- In a medium-size bowl, mix the eggs and buttermilk together and pour it over the top of the lentil mixture.
- Place a few bay leaves over the egg mix, sprinkle on the almonds and place it in the oven to bake for 30 minutes, until golden brown.
- Once cooked, remove from the oven, let it cool slightly and enjoy!
