With the season comes an abundance of crisp, colorful carrots straight from our local farms! This time of year, our farmers are pulling up carrots that have been growing slowly over the cooler months, which means they're extra sweet and tender—perfect for everything from spring salads to roasting on the grill. Plus, they're packed with beta carotene, fiber, and vitamins to keep you energized as the days get longer and brighter. Looking for ways to enjoy them? Try shredding them into slaws, toss them with a chimichurri, or glaze them.
