Creative Ways to Reduce Waste and Use Leftovers
“The average US household throws away an estimated 30 percent of the food it buys, according to a 2020 study in the American Journal of Agricultural Economics—and that accounts for nearly $250 billion in consumer food waste each year… All that waste has a huge impact on the environment… but it also has a major impact on your wallet—that same study found that the average household loses over $1,800 a year in food waste. When your budget is tight, every wasted serving of leftovers and spoiled batch of produce matters."
To read the 11 creative ways to use up your leftovers, reduce your food waste, and stop wasting money, visit the PDX CampusWell.

I spent this past weekend with my son celebrating Mother's Day. It was a special time to be with my son and to start getting to know the extended community of friends and family he is building as a young adult. My social media feeds are filled with a range of thoughts on Mother's Day, recognizing the complexity of our lives and, perhaps even more profoundly, the varied relationships each of us has to the construct of "mother". I appreciate having access to all of these perspectives. They help me to understand myself and the meaning these relationships hold for my friends and colleagues. Though we all have different takes on motherhood, what remains constant is the importance of expressing appreciation for the people who have helped us to get to our present moment in life. The love of many different mothers, biological and otherwise, have made me the person I am today. I wonder if being in touch with that gratitude is what this holiday is really about.
