Korean BBQ Wraps

serves 2-3

Ingredients
1 bag shredded coleslaw
1 package vegan chicken (Lightly Seasoned Beyond Chicken preferred) 
1 bottle of Korean BBQ sauce (Whole Foods brand) 
Large, burrito size flour tortillas 
Just Mayo 
Sesame oil 
Black sesame seeds 
Thinly sliced cucumber 


Instructions
Prepare cole slaw: 
• Mix bag of coleslaw with just enough mayo to make it moist, but not swimming in mayo. Add a splash of sesame oil, and taste
• Throw in about a tbsp of black sesame seeds, and toss to coat.
• Saute your Beyond Chicken in a little oil. 
• Transfer to a bowl and toss with about 1/2 cup of the BBQ sauce

Assemble your wrap
• Lay out a tortilla, spoon in your cole slaw
• Top with four pieces of chickn, 
• Optional - spoon in some extra sauce
• Add a few slices of cucumber. 
• Roll up, folding in the sides, so it's nice and tight. 
• Slice on the diagonal, and serve.
