Q: Who’s eligible for a booster shot?
A: UM has explained the guidelines about who’s eligible for a COVID-19 booster dose here. For students, if you’ve had your two Pfizer doses at least six months ago AND you have a qualifying health condition or another of the conditions on the list, you’re eligible.

Pumpkin spice, but make it good for you

Make these muffins with pumpkin to make you happy and low sugar to help you focus.

Recipe
- 1 3/4 cups whole wheat flour
- 1 teaspoon baking soda
- 2 teaspoons pumpkin pie spice (2 1/2 teaspoons if you’re pumpkin spice serious)
- 1/2 teaspoon salt
- 1 cup pumpkin purée (a little over half a can)
- 2 large eggs, room temperature
- 1/2 cup maple syrup
- 1/3 cup coconut or olive oil, room temperature
- 1/4 cup milk, room temp
- 1 1/2 teaspoons vanilla extract
Instructions
- Preheat oven to 350 degrees and line a 12-cup muffin tin with paper liners or spray with nonstick cooking spray.
- In a medium bowl, whisk together the flour, baking soda, salt and pumpkin pie spice.
- In a large bowl, stir together pumpkin, eggs, maple syrup, cooled coconut/olive oil, milk and vanilla extract until mix is smooth.
- Add the dry ingredients to the wet ingredients and stir until just combined, no overmixing.
- Pour the muffin batter into muffin cups (sprinkle sugar on top if you want) and bake for 20-24 minutes, or until a toothpick stuck into the center of a muffin comes out clean.

If you’re interested in joining the UM MOST 2022 staff, stop by an interest meeting on Tuesday, Oct. 19, 5:30 p.m. in the Center for Inclusion and Cross Cultural Engagement, Student Union first floor.
If you need additional credit hours to keep your full-time status this Fall, the deadline to add a class for Second Fall Term is Oct. 22. You may have extra tuition charges based on whether you dropped any previous classes, so make sure to contact the Office of Financial Aid if you have questions.
