Looking to add a touch of Pennington nostalgia to your holiday festivities this year? Longtime faculty member Terry Burns was known not only for his passion in the classroom, but also for the legendary eggnog he whipped up each December—a recipe that became a quiet tradition among colleagues and friends. Now, you can bring that same cheer to your own celebrations.
To make Mr. Burns's signature eggnog, combine 64 ounces of eggnog with a half-gallon of vanilla bean ice cream in a large bowl. Blend with a hand mixer until it turns perfectly smooth and frothy, then pour it into a punch bowl. Finish it off with a generous sprinkle of cinnamon and nutmeg.
Serve it at your next gathering, raise a glass, and enjoy a sweet taste of Pennington spirit. ❤️
