Fundamentals of Culinary Medicine
Summer 2024 Course Offering
CULI 1810
Fundamentals of Culinary Medicine will teach students the practical skills to realistically
apply nutrition concepts to impact their own life and those around them though great
tasting food that happens to be good for them. This course provides a comprehensive
overview of nutrition and application of nutrition principles through culinary medicine.
The course includes hands-on cooking classes, didactic lectures, guest speakers and
field trips. Topics covered include basic nutrition concepts, evaluating research, recipe
development and modification, food security and barriers to healthy eating, inflammation and an anti-inflammatory diet, food allergies and intolerances, and food policy.

We are offering positions as medical assistants in our medical office and endoscopy technicians in our endoscopy suites. Medical assistant’s role include patient intake, triaging, rounding patients in rooms, taking vitals, prior authorizations, and medication refills. Endoscopy technicians assist physicians during colonoscopies and endoscopies via positioning patients, clipping polyps, taking biopsies, and assisting with various administrative work flows. This is
a great learning opportunity for students on the pre-Med or pre-PA path that would like have hands on experience, gain patient experience hours, and have dedicated mentorship from our providers.

Requirements for Position:

Perform direct patient care, develop hands-on clinical skills (blood draws, iv’s), start developing historian and assessment skills, opportunity to assist in FDA clinical trials, with potential for publication. Observe in the operating room during a wide range of operations, including both body and facial surgeries.
Job Description:
Assist Dr. Somenek and Dr. Pittman in all patient care responsibilities. Intake of patient’s medical history and reasons for visit, which range from surgical consultation to in-office procedures (lasers, excisions) and injectables (botox, fillers). Manage flow of patients and scribe during visit, using an Electric Medical Record (EMR) for documentation. Have an understanding of medications and their indications, respond to
patient’s medical questions and instruct on post-procedure care. Perform suture removals, post procedure patient check-ins, assist with hotel post op visits, assist in minor procedures.
