CULI 1810 – Fundamentals of Culinary Medicine
Course Description: Fundamentals of Culinary Medicine teaches students the practical skills to realistically apply nutrition concepts to impact their own life and those around them though great tasting food that happens to be good for them. This course provides a comprehensive overview of nutrition and application of nutrition principles through culinary medicine. The course includes hands-on cooking classes, didactic lectures, guest speakers and field trips. Topics covered include basic nutrition concepts, evaluating research, recipe development and modification, food security and barriers to healthy eating, inflammation and an anti-inflammatory diet, food allergies and intolerances, and food policy.
Course Format: Class are held in-person at the Seva Teaching Kitchen. The course will include hands-on cooking sessions, didactic lectures, guest speakers, and field trips.
The course is a Lecture / Lab series.
For the Fall 2024 semester lectures are held most but not all Tuesdays from 1:00 PM to 2:30 PM
There are four options for the Lab component:
Monday 10:00 AM to 12:30
Monday 1:30 to 4:00
Tuesday 9:30 to Noon
Wednesday 1:30 to 4:00
Audience: The course is appropriate for undergraduate students who are interested in learning about and improving their own, culinary skills, nutrition literacy, and/or health and for students seeking careers in medicine, health, and nutrition.

EMT Volunteer
McLean Volunteer Fire Department | McLean, VA
The McLean Volunteer Fire Department is looking for volunteers to assist in the EMT division. The Fire Department expects a commitment of at least three years. You will:
1. Need to volunteer at least 20 hours per month (240 hours per year), including completion of mandatory refresher/recertification training.
2. Attend monthly membership meetings at McLean station on the third Monday of each month at 7pm (members must attend at least six-out-of-twelve meetings per year).
3. Attend two out of four “all-hands” events on weekends throughout the year.
4. Need to be a U.S. citizen or current legal resident with at least 24 months of U.S residency.
5. Need to be 18 years of age or older.
6. Need to successfully pass a background investigation.
7. Need to possess a valid U.S. driver’s license.

Medical Assistant/Research Coordinator

The Medical Assistant works as part of the health care team by assisting the practice physician in providing highest quality patient care in a professional and personalized manner. Duties:
● Perform blood draws
● Coordinate research studies; serve as study coordinator
● Escort patients to exam rooms

● Use EMR scribing, ensure all related reports, labs and information is available in patients'
medical records prior to their appointment

Qualifications:

● The ability to perform or willing to learn phlebotomy
● Candidates must consent to and pass a criminal background check
● Excellent computer skills
● Experience w/ EHR, scribing
● Experience on interest in clinical research
● GCP training or willing to be trained in this and research study procedures
● Allergy testing experience or willing to be trained

Clinical Research Volunteer Position
Children’s National Hospital | Washington, D.C.
The 3Ms – Learn T1D with Black Families Intervention study at Children’s National Hospital in Washington, D.C. is looking for two clinical research volunteers to help with data collection. The 3M (Meals, monitoring, and medication) intervention is a proposed mobile health intervention to measure and improve diabetes health outcomes in Black
adolescence and youth. This study will focus on Black identifying youth, aged 10-15 years old, who have been diagnosed with type 1 diabetes for at least 6 months.
Responsibilities will include:
• Attending bi-weekly team meetings, estimated on Friday mornings via zoom.
• Attending once-a-month Behavioral Research Team Meetings, first Wednesday of
the month.
• Participating in home visits to obtain research data related to the intervention.
We are looking for:
• A person with experience or exposure to cultural competency and humility.
• Someone open to doing home visits in the area in the afternoon (A car is not
necessary).
• A sophomore or junior currently attending a four-year institution.
• Demonstrated writing and editing skills, particularly in Microsoft office.
• Someone interested in psychology and clinical research.
We are seeking 2-3 undergraduate volunteers to aid in our study, primarily, undergraduates who can commit at least a year in the position, beginning in August. No prior research experience is required.

Lion Tiger Department Internship
Smithsonian National Zoological Park | Washington, DC
The selected student will work under a keeper in the Lion Tiger unit of the Smithsonian National Zoo in Washington, DC. The intern will learn husbandry and management techniques for a wide variety of animals including lions, tigers, Andean bears, bobcats, prairie dogs, porcupines, maras, and domestic livestock. The intern will learn husbandry skills, including diet preparation, enclosure cleaning and maintenance, enrichment preparation, and behavioral observations. The intern will also gain public speaking skills by interpreting animal behaviors to visitors. By the end of the semester, the intern will complete a poster and a paper with a focus on an animal
husbandry procedure.
The intern will not have any direct contact with collection animals. The selected intern must be able to work in all types of weather, lift 50 pounds, follow all safety protocols, complete health screenings, and complete a background check.
The internship is an entry-level program, and as such applicants with prior zoo experience may not find it very beneficial. Applicants interested in other aspects of the zoo field, including laboratory research or veterinary medicine, may not find this internship applicable. Students, recent graduates, or individuals in the workforce with little to no experience in a zoo setting are encouraged to apply. Current students will receive support to earn college credit for their time spent in the program.
