Tomorrow, Human Rights Day will be observed in South Africa. This public holiday serves as a reminder of the sacrifices made for human rights and the ongoing fight for justice and equality in the country.

As you take a moment to commemorate the day tomorrow, sit back and enjoy a refreshing cup of Rooibos tea, which is also deeply entrenched in the shared DNA of South Africans.

Warren Mendes is a South African chef, TV presenter and food stylist. Recently, season two of his hit show, Food Trail: South Africa, aired. The show focuses on the vast landscape of South African cuisine.

In one of the episodes, Mendes shows viewers one of his favourite desserts: cream burnt Rooibos.

“My favourite recipes are indeed the simplest,” Mendes explains. “For example, this dessert has only one handful of ingredients and requires no complex equipment – and the result is an addictive pudding with a very unique flavour.”

Looking for a sweet indulgence to enjoy this long weekend? This Rooibos mousse cake is simple, easy to make and will have you coming back for more.

Ingredients:

Four eggs
200g of sugar
20ml of powdered gelatine
180ml of hot, strong Rooibos
30ml of honey
Juice of one lemon
400ml of fresh cream, whipped to a soft peak

Directions:

Whisk together the eggs and sugar until light and fluffy.
Dissolve the gelatine in the hot Rooibos. Add the honey and lemon juice.
Fold the gelatine mixture gently into the egg mixture. Lightly fold in the cream.
Place the cake in the refrigerator for about one hour to set.
When the mousse has set, cut it into any shape you desire, such as small rounds or triangular wedges. Decorate the shapes with chocolate fingers, sugar curls and sprigs of mint. Finally, serve up with a pot of Rooibos tea and enjoy!
Drizzle some chocolate sauce over the top for some extra chocolatey goodness.
