VEGAN RECIPE OF THE WEEK!
Korean BBQ Wraps

makes 4 wraps

Ingredients:

For the Wraps
1 bag vegan chicken (gardein or beyond meat)
Trader Joes Sriracha BBQ sauce
1 yellow onion, sliced
1 tbsp minced garlic
1 tbsp minced ginger
1 tbsp veg oil 
4 large tortillas


For the Slaw
3 cups of shredded cabbage or coleslaw mix
1/2 c vegan mayo (plus more for schmearing)
2 T sugar
1 T lemon juice 
1 T vinegar
salt and pepper


    Directions:
    Mix the slaw ingredients together in a bowl, set aside. Heat 1 tbsp oil in frying pan over medium high heat. Add onions and cook until nearly tender. Add ginger and garlic, cook until fragrant. Cook vegan chicken as directed on package. Add to onion mixture. Add BBQ sauce to coat. 

    Mix mayo with the BBQ sauce to form a spread. Add as much as you like to your tortilla. Top with chick'n mixture. Top with slaw. Wrap it up and eat it! Easy and delicious!
