Beluga, a vibrant and trendy restaurant in the V&A Waterfront in Cape Town, is celebrating Heritage Day with a special 2-course lunch menu.

The dessert included in this menu is a twist on a Malva pudding - a true South African staple! Beluga has chosen to incorporate Rooibos into their Malva pudding for this “local is lekker” promotional menu.

Beár Bia is a podcast celebrating the unison of Irish food & drink. Episode six of this podcast series has recently been released on all major streaming platforms. In this episode, the podcast focuses on a restaurant called Coppinger. This eatery recently reopened and now boasts an impressive, modern menu.

In the podcast, the host and head chef enjoy some of the dishes Coppinger currently has on offer. The first course was paired with a Rooibos cocktail, which the show’s host was absolutely blown away with! The drink is made with Redbreast 12, Rooibos tea, vanilla syrup and bitters.

Looking for a uniquely South African recipe to rely on this Heritage Day? Try this recipe for Rooibos and Apricot braai skewers!

Ingredients

For the skewers:

1kg beef fillet of your choice (cut into small cubes)
200g whole soft apricots
250ml Rooibos
Fresh bay leaves
30ml beef dipping
Metal / wooden skewers
Lemon wedges (optional)

For the marinade:

200ml extra virgin olive oil or avocado oil
50ml lemon juice
25ml white vinegar
25ml whole coriander, crushed
4 cloves garlic, crushed
Salt and pepper to taste

Directions

Soak the apricots in the Rooibos for at least 30 minutes.
Mix all of the ingredients for the meat marinade together in a bowl and marinate the meat for 30 minutes.
If you are using wooden skewers, soak them in warm water for 30 minutes to prevent them from burning on the braai.
Thread 3 or more cubes of meat on each skewer, alternating with an apricot and 1 bay leaf.
Braai or roast the skewers under the grill until browned on all sides.
Tear out the bay leaves just before serving.
Serve with lemon wedges on the side and enjoy with a refreshing, cooling iced Rooibos drink!
