VEGAN RECIPE OF THE WEEK!
Norine's Chocolate Chip Cookies of Perfection

Ingredients:
2 and some change (~1/8 cup) cups all-purpose flour
1 teaspoon baking soda
1/2-3/4 teaspoon salt
1 cup vegan margarine (we prefer Earth Balance)
3/4 cup granulated sugar
3/4 cup packed brown sugar
1 teaspoon vanilla extract
2 "eggs" (1 T potato starch+ 2 T warm water)
1 cup vegan chocolate chips or chocolate chunks cut up into 1/2 in pieces. 

Directions:
Preheat oven to 375 and lay out parchment paper on two baking pans.

Agitate the heck out of the potato starch and warm water until viscous. Cream this mixture together with both sugars, vanilla, and margarine until very smooth.

Mix in flour/baking soda/salt until a sticky, goopy dough. Gently mix in chocolate chunks until chocolate is virtually uniform.

Scoop into a little larger than 1 inch plops of dough and make certain they're circular with no dough strands hanging out (they'll burn in the oven and taste weird).

Bake for approx 10 min or until a golden brown color on the edges. Let cool for at least 10 min and enjoy with coffee or milk.
