January is an odd month, isn’t it? For me, the first week is always a blur: I’m back at work, coming down from the high of the holidays and stuffed to the brim with all of my December indulgences. Then all of a sudden, I feel the need to get healthy ASAP. I know I’m not the only one, there’s a whole industry that relies on these urgent resolutions! January is always the month of heavily discounted gym memberships, weight loss meal plans galore and everyone you know is juicing and cleansing. There’s also “Dry January”, a month without alcohol to help reset (Although, I truly cannot find it in me to attempt this; I’m a working mom with a 2 year-old, in a pandemic. I will not turn down a martini in these trying times.)
That being said, I am working on new wellness habits to get this year off to a better start than its predecessor. I started taking online yoga and barre classes and began walking regularly with a friend of mine from college (a practice that has been reaping invaluable mental health rewards as well).
Of course, a shift towards healthier habits also includes what we eat but this is where I struggle a bit. As you may recall, cooking is not my strong suit. Some may say it’s not a suit of mine at all and I’m not even in the right closet. It just doesn’t come naturally to me, but I do try! My goal for 2021 (or, at least the month of February) is to work on my meal planning. I need to build up an arsenal of healthy dishes that can become part of our weekly dinner rotation.
I’ve always found the best source for these go-to, tried and true recipes to be family, friends and neighbors. So, I tapped into our MLN Crew for help! Not surprisingly, everyone was happy to share their “fan favorites” and I thought you might enjoy them too. Delicious and healthy meal ideas, from our kitchens to yours. • Huevos Rancheros Verdes (Laura) • Roasted Whole Cauliflower With Feta (Regina) • Easy Peasy Mexican Chicken (Natalie) • NYT Turkey Chili (Kate) • Turkey Meatball Tortellini Soup with Spinach (Marisa) • Brown Sugar-Glazed Salmon (Gina) • Crockpot Chicken Fajitas (Chris) CLICK FOR RECIPIES!
