Ingredients:
- 2kg spareribs
- 1 rosemary sprig
- 1/2 cup sugar
- ¼ cup water
- 1/4 cup red wine vinegar
- 2 Rooibos tea bags
- 1/4 cup orange juice
- 1/4 cup ketchup
- 2 garlic cloves, minced

Method:
- Cover the spare ribs and rosemary sprig in water and heat to the boil in a saucepan. Reduce heat to low; cover and simmer for 1 hour or so.
- Meanwhile, heat the Rooibos, sugar and water to boiling in a small saucepan, to make a strong Rooibos syrup. Remove the Rooibos tea bags after steeping, then add ketchup, vinegar, orange juice, garlic, Tabasco sauce and salt. Reduce heat to low; simmer, uncovered, 5 minutes or until the mixture is thickened.
- When your fire is ready, place the ribs in your braai grid and start cooking the ribs over the coals. Be sure to turn regularly. Brush the ribs with the Rooibos syrup sauce. Braai for about 20 minutes, or until heated through, brushing occasionally with the Rooibos syrup mixture.
- Allow the ribs to rest for a few minutes before enjoying.
