Butter roll & grill on medium in a non-stick frying pan until browned. Slice yellow onion in half and cut into 1/4" pieces from top to bottom. Do the same with a green bell pepper. In the same non-stick frying pan saute onion & pepper on medium-high until soft. Move pepper and onion to side and warm 1/4 lb of roast beef. Add pickled jalapenos & banana peppers to onion/pepper mixture. Use plastic spatula to separate meat into small pieces, then mix all ingredients together. Douse mixture generously with Texas Pete Hot Sauce and cover with pepper jack cheese. Once cheese is melted pile onto the grilled hoagie roll, slice in half and serve with salt and vinegar chips.
