Bok Choy from Hot Spell Farm
Greens are abundant at the farmers market this time of year, and bok choy (also called pak choi) is one of the many types of greens we've been seeing on our farmers’ tables. This crisp veggie is mild, slightly sweet, and super versatile, making it an easy addition to your weekly lineup. Plus, you can use the whole plant—stems & leaves! Just trim the base, give it a good rinse (dirt loves to tuck in between the layers) and you’re ready to cook with it.
