Ingredients:
For the leg of lamb
- 2 onions, peeled and quartered
- 2 carrots, roughly chopped
- 2 bay leaves - bay leaves
- 2kg leg of lamb, including bone and shank
- 2,5ml each ground coriander and cumin
- Salt and pepper
- 6 garlic cloves, peeled and halved
- 4 fresh rosemary sprigs, broken into smaller pieces
- Juice of 1 lemon
- 500ml strong Rooibos, plus extra if needed
For the rice
- 500ml basmati rice
- Handful of fresh parsley, chopped
- Grated zest of 1 lemon
Directions:
- For the leg of lamb: Arrange the onions, carrots and bay leaves in the dish or roasting pan.
- Using a sharp knife, make small slits in the fatty side of the lamb. Season the meat all over with the coriander, cumin and salt and pepper. Thoroughly rub the seasoning into the meat.
- Stuff the garlic and rosemary into the slits in the meat, then put the lamb, fatty side up, on top of the veggies in the dish or pan.
- Drizzle the lemon juice over the meat, then pour the Rooibos tea over. Loosely cover with a sheet of baking paper, then close the lid firmly.
- Roast for 2½ hours. Check halfway through and, if the liquid has evaporated, add more Rooibos. The meat is ready when it’s tender, and golden brown and almost falling off the bone.
- For the rice: In the meantime, cook the rice according to the packet instructions. Drain well and steam-dry in a colander. Transfer the rice to a bowl and mix in the rest of the ingredients.
