Figgie Summer Carrot Slaw
Ingredients
5 c shredded carrots, about 4 med-large
1 c shredded radish, about 5 med-large
2 large green onions, ends removed and sliced
¾ c diced dried, black mission figs
¾ c plant-based mayonnaise
½ c raw sunflower seeds
1-2 T grated fresh ginger
1 T apple cider vinegar
Course-ground black pepper, to taste
Himalayan pink salt, to taste
Directions
Place all ingredients into large mixing bowl and toss until well coated and mixed. It’s that easy. Enjoy!
