VEGAN RECIPE OF THE WEEK!
Crabby Patties
 

Ingredients:

2 cans chickpeas, drained and rinsed
1.5 c ground saltines
3 green onions, finely chopped
1/2 cup bell pepper (I used a mixture of red, yellow and green), small dice
2 T red onion, small dice
1 T dried parsley
2 t dijon mustard
1 T lemon juice
1/4 c vegan mayo
hot sauce (optional, to your taste)
1.5-2 T Old Bay Seasoning (to your taste)
1/4 c ground flax
Oil for pan frying

Directions:

Process crackers in food processor until finely ground. Take out 1/3 of a cup and set aside. Throw in the chickpeas and pulse until beans are chopped, but not completely pulverized.

Place contents of food processor, the rest of the crackers, and the rest of the ingredients (except oil) and stir together.

Form into 8 patties. Heat oil until fairly hot.

Cook crab cakes until brown on each side, lightly pressing down as you cook them.

And then eat ’em with whatever you want. More mayo, dijon mustard. I like them both mixed together with a little hot sauce.
