Hello Bruce,
Everyone who knows me understands that outside of Italy, Japan holds my heart like no other place. I fell in love with the culture, food, history, architecture and people 10 years ago and my fondness has not waivered. I recently had the incredible opportunity to revisit this cherished haven with a small group of colleagues. The crisp February air carried a hint of anticipation as my adventure began in Tokyo. I flew into Haneda vs Narita, which I highly recommend for convenience, and settled in near Tokyo Station. I had a great night exploring Tokyo once more and it set the stage for my upcoming gastronomic journey weaving through time-honored traditions and contemporary artistry in some lesser known areas of Japan.
Kanazawa's Embrace - An early start the next day saw us whisked away on the Shinkansen (bullet train) to Kanazawa. I have been to Japan several times, but this time I was fortunate to have my best view to date of Mount Fuji, from the Shinkansen. The snow covered city greeted us with the vibrant energy of the Omicho Market, dating back to 1722, where we dove into a sensory feast sampling street food such as rich and creamy uni (sea urchin), fried oysters, kinkan (japanese kumquats), and washing it all down with some refreshing craft beer! I savored the region's famed seafood during a Temari sushi making experience, each delicate sphere a testament to culinary artistry - and it was pretty good for my first time making sushi. The afternoon shimmered with the brilliance of gold leaf where we tested our artistic gold-leaf crafting skills. This was followed by a stroll through the serene beauty of Kenrokuen Garden, a landscape painting brought to life and especially serene during a heavy snow-fall. Highlights of the garden are the Kasumigake Pond, Hisagoike Pond and waterfall, Teahouses and the Seisonkaku Villa. Once through the garden and as dusk painted the sky, we checked into a contemporary hotel downtown and headed out for an incredible french dinner at L'Oberduma. It was a symphony of flavors, mostly French with some Japanese influences, a fitting end to a day steeped in Kanazawa's rich heritage.
Toyama's Artistic Heart - In the morning we had a quick japanese buffet breakfast that really wowed us and then had a formal tour of the hotel - which had some incredible suites. Next we headed to Toyama. The morning was dedicated to art, starting with the refined collection at the Ohi Museum of Art. It was an honor to have a guided tour with Toshio Ohi Chozaemon XI, 11th generation potter who, along with his father, has won several awards from Japan's Prime Minister. Afterwards, we had a simple yet satisfying lunch of Onigiri from Yamazato-no-sho which was enjoyed on the go, another testament to Japan's efficient and delicious food culture. The afternoon was dedicated to the transformative art of glass at the Toyama Glass Studio. Here, we didn't just tour the glassblowing facilities and observe; we actually crafting our own wine glasses from the initial design phase, each breath shaping molten glass into a unique creation. We once again stayed in a modern hotel, yet this time there was a twist - it had a bonafide Japanese Onsen (public bath), with sauna and cold plunge pool. It was very cathartic and refreshing. Later we made our way to an amazing multi-course counter dinner where watching the chef and his tea prepare Michelin star level delicacies was equally delicious and entertaining.
Iwase's Timeless Charm - On our way to Iwase, we were able to scale the lookout tower over Toyama bay before heading into town. The district of Iwase unfolded like a scroll of history. We explored the Taizo Glass Gallery, where contemporary glasswork echoed the artistry of our previous day's endeavors. At GAKU ceramics, we admired the rustic beauty of traditional Japanese pottery, each piece whispering tales of ancient kilns. The Kobo Brew Pub offered a taste of local craftsmanship in liquid form, while the Tajiri Sake Shop introduced us to the nuanced world of Japanese rice wine. Fun fact - you can spot the sake breweries from the outside by looking for a hanging "sugidama," a large spherical ball made of cedar branches, which signifies that new sake has been brewed and is a traditional symbol of a sake brewery - you'll typically see it hanging above the entrance. From there, we found an amazing wood carving studio, where intricate carvings revealed the dedication and skill of artisans. Lunch at Sushi GEJO was an intimate affair, the chef's mastery evident in every delicate slice. We stopped and shopped in the local Iwase cafe where they sold souvenirs, snacks, and sake!
Before heading to our next accomodation, the afternoon led us to the beach. Yes, the beach in winter in Japan, and as you can expect, it was magnificent - covered by a foot of snow with the waves crashing against the beach was like something out of a movie. he River Retreat Garaku was a sanctuary of tranquility, overlooking the Toyama river. The suites were luxurious and the in-room hot tub overlooking the river was great, but even more incredible were its onsen facilities. One large public indoor pool heated from thermal baths and then additional hot pools extended outdoors with views of the river passing while the 32 degree windswept air subbed for a cold plunge. The retreat featured many prominent works of art and had an incredible library. Service was stellar and dinner at the hotel was equally top-notch. Dinner took on more meaning as we were presented with the wine glasses we had made the previous day to enjoy their wine pairing. Each course was a further tale of gastronomic artistry.
Farewell Toyama - Our last day in Toyama began with an incredible Japanese breakfast along the river's edge and a final relaxing spell in their lobby, sipping hot Japanese tea in front of the fireplace. We then proceeded to the Toyama Glass Art Museum which provided a broader perspective on the medium we had explored earlier, its exhibits a testament to the versatility of glass. The building itself was a work of art - and meeting with some of the incredibly talented student artists was a blast! Afternoon sushi lunch at Dai was a casual affair, a moment to reflect on the journey's experiences and also a moment to experience some of the freshest sushi ever, pulled right from the Toyama Bay and the Sea of Japan morning! The afternoon was dedicated to the intricate art of Kumiko woodworkings, where we witnessed the delicate assembly of wooden pieces into stunning patterns. Many of the top hotels use these wooden patterns in their design aesthetic - such as The Shinkansen awaited, ready to whisk us back to Tokyo. As the train sped towards the capital, we reminisced about the encounters, the flavors, and the artistry we had experienced.
Tokyo Redux - After arrival in Haneda, I managed to do some last minute shopping. And my final dinner in Tokyo was a combination of Indian and Japanese cuisine with Pork Katsu curry - and it was outstanding and a fitting end to a journey that had been a carefully orchestrated web of curated experiences and personal discoveries. The next afternoon I was fortunate to access the Japan Airlines lounge where I further expanded my repertoire of Japanese cuisine and Japanese adult beverages. Upon reflection, my message to everyone; Don't let the winter blues hold you back. Embrace the opportunity to map out your adventures and create memories that will last a lifetime. And at some point do yourself a favor and make your way to Japan, you will not regret it!

It is always good to plan and prepare ahead for your travel. A few tips we have found that make a profound difference:
