VEGAN RECIPE OF THE WEEK!

Spicy Chow Mein

serves 4

Ingredients
1 onion, chopped
1 green pepper, sliced into strips
1 celery stalk, chopped
2 cloves garlic, minced
1 T ginger, minced
1 package rice noodles
2 T sesame oil
3 T soy sauce
2 T white wine
2 T vinegar
1 T lime juice
1 t red pepper flakes (adjust to taste)
1 T veg oil

For Serving
Green onions
Cilantro
Roasted sunflower seeds or crushed peanuts

Instructions
Cook rice noodles according to package specifications. Drain and mix in 1 T sesame oil. Set aside. Whisk soy sauce, wine, vinegar, lime juice, pepper flakes and 1 T sesame oil. Set aside.

Heat 1 T veg oil in large frying pan or wok. Add garlic and onions, cook for a minute, careful not to burn. Add the other veggies and cook on high heat until almost cooked through. Add your sauce, add tofu, and cook for a couple more minutes, until vegetables are tender but still crunchy. Serve over the noodles.
